Cherry compote, blackberries and\nblackcurrants lead the wine, with plums, blueberries and lots of spices\nin the background - thanks to the 14-month oak aging. On the palate,\nblack berries dominate, complemented by black pepper, cocoa beans,\ncloves, mild chocolate and caramel in the background. Velvety, soft,\nbut substantial, the sip is full.<\/p><p><strong>Vinification<\/strong><br \/>Through massal selection, the vines with the best characteristics were\nidentified in three Bordeaux vineyards, which we then plante in Balf.\nAfter the manual harvest and destemming, fermentation lasts 21 days\non the skins, aided by manual punching down and pumping over. Once\nmalolactic fermentation is finished, the wine is racked, to be matured\nfor 14 months; 70% in 2-3 year-old, 30% in new Hungarian, French and\nAustrian oak barrels (300 liters).<\/p><p><strong>Food Pairing<\/strong><br \/>With game, venison, veal liver, semi-hard and blue cheeses.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element
