Gundel has been a close-knit community for 130 years now – a living piece of history and a guardian of our country’s cultural and gastronomic heritage. What is the secret behind Gundel, and where does it stand in the gastronomic revolution that has been unfolding for several decades?

Guests are welcomed by atmospheric lighting, period décor and delightful live music at the Gundel restaurant, which first opened its doors 130 years ago. The dishes once prepared here have now become household names. Who wouldn’t love Újházy chicken or Palóc soup, Somlói galuska, not to mention Gundel pancakes? These dishes also appear on dining tables at home, though we may not realise that they are all part of the Gundel legacy.

The name of János Gundel, founder of the gastronomic dynasty that has become a Hungarian institution and gained worldwide fame, is as closely associated with Budapest as Zacher is with Vienna or Ritz with Paris. He moved to Buda from Bavaria in 1857, began his career in small inns, and then, at the age of 25, opened his first restaurant, the Bécsi Sörház. He is credited with introducing the famous Wiener schnitzel to Budapest’s culinary scene, and he also introduced beer and pretzels to the city. Kálmán Mikszáth described the restaurateur as follows: „He ran his business as though he were not welcoming paying customers to his premises, but rather welcome, dear guests, for whom providing good service was not a business transaction, but Hungarian hospitality.”” One of his most famous dishes, palóc soup, is also linked to the writer. According to legend, Mikszáth longed for a dish with a rustic, palóc flavour, and it was at his request that the innkeeper created the well-known dish.

János Gundel’s son, Károly Gundel, carried on the tradition. He spent his apprenticeship years at the István Főherczeg Hotel, where, like his father, he initially worked as a bellboy. In 1907, he married; his wife, Margit Blasutigh, became his partner both in business and in his private life. They had thirteen children. They took on a lease of the Wampetics restaurant in City Park – the predecessor of today’s Gundel restaurant – the upper floor of which became the family home. Gundel soon became legendary, serving as one of the most important meeting places for the middle classes. In the summer, the garden would fill with families thanks to its proximity to the zoo. By the 1920s and 1930s, it had gained an international reputation, and when King Victor Emmanuel III of Italy visited Hungary in 1937, he entrusted Károly Gundel with organising the banquet in Székesfehérvár. The pinnacle of his recognition came in 1939, when his restaurant was chosen as the official restaurant of the Hungarian pavilion at the New York World’s Fair. Károly Gundel became known in the international press as „the Hungarian Brillat-Savarin”. (Jean Anthelme Brillat-Savarin was a French lawyer, politician and gastronome who lived at the turn of the 18th and 19th centuries.)

Today, the restaurant carries on the legacy of Károly Gundel through its ‘Nemzeti11’ selection of dishes – built on centuries-old traditions and a legacy of world-famous recipes – and through its hospitality.

The restaurant Zoltán Kőrössy, one of the founding owners of the operator Eventrend Group, recalls that Károly Gundel ran the City Park restaurant with the intention of keeping its doors open to everyone. He shaped Gundel into a place defined by hospitality, culinary art and the preservation of tradition – a place where it is always a pleasure to visit. The current Gundel team embraces this legacy and continues to build on it. Over the past thirty years, many people have regarded Gundel as an unattainable luxury restaurant. Today, however, they operate with pricing tailored to Hungarian guests and aim to attract as many local diners back as possible. Mariann Pintér, Marketing Director, emphasises that Károly Gundel did a great deal to promote Hungary’s gastronomic heritage. With an instinctive flair, he revitalised Hungarian cuisine, blending its original flavours with the refinements of French cuisine, whilst utilising modern culinary techniques.

The aim of the gastronomic revolution that has been taking place in recent decades is to revitalise the country’s culinary culture, but whilst striving for higher standards, it is also important to consider what we eat at home and in restaurants, the quality of the food we buy, and the methods and ingredients we use when cooking. According to Viktor Moldován, executive chef at Gundel restaurant, the Gundel In this process, it safeguards the gastro-cultural heritage, as there is a segment within traditional Hungarian cuisine – situated just below the level of fine dining – that few have managed to articulate clearly. Consequently, few people today carry on the Hungarian tradition of the Gundel legacy.

“Our focus isn’t on fine dining, but on authentic Hungarian cuisine,” states Viktor Moldován. “Our team works very well, but our primary goal isn’t to win a Michelin star. We work for our guests; it’s up to them to decide whether to choose us.” We don’t have any reimagined or reworked dishes; we strive to use traditional techniques, even if it means that preparing each dish requires much more attention and working hours. We combine these with the modern technologies without which it would be impossible to run a catering business in Hungary today.

They mainly prepare the dishes that the Gundel family left them.

The restaurant is considered a must-visit destination amongst foreign visitors, who often head straight there from the airport with their suitcases in tow. However, whilst honouring the heritage of its recipes, the restaurant must also evolve. One dish, for example, is smoked trout with horseradish and cucumber salad; the chef brought the technique for this back from Japan, but the flavours are shaped by Hungarian traditions.

– I’ve been working in this profession for thirty-three years, fifteen of which I spent in Japan, but I’ve never tried my hand at making Japanese dishes. Whenever I came across something I thought was good, I always tried to incorporate it into my own ideas. This fish is prepared in the style of a Japanese dish, yet it remains a distinctly Hungarian dish. We add cucumber to the pickled bodza, which gives it that Hungarian twist. ‘Perhaps in thirty or forty years’ time, this dish will be counted amongst the Gundel classics in the same way that chicken paprikash is today,’ says Viktor Moldován, adding that the Gundel legacy is also upheld in terms of quality. When he took over the kitchen, he removed every dish from the menu that wasn’t prepared according to Hungarian tradition.

‘We have our own heritage, our own culture,’ adds the chef. ‘Just look around the city – everyone is promoting a different culture, but we mustn’t do that. We also pay attention to how environmentally friendly, cost-effective and seasonal we are.’ We change our menu three times a year and prepare dishes to suit each one.

The restaurant is popular all year round, but the seasonal opening of the garden multiplies the number of guests: the garden, which evokes a bygone era of peace, attracts visitors. The lush vegetation and romantic outdoor seating areas, not to mention the mouth-watering dishes, also appeal to the younger generation.

Gundel restaurant serves familiar Hungarian dishes, brimming with flavour and evoking old memories, in a setting where the atmosphere of turn-of-the-century Budapest can still be felt today.

[193
post-16871","sajto","type-sajto","status-publish","has-post-thumbnail","hentry","publikacio-magyar-nemzet
["GET
