– an icon of Hungarian cuisine at Gundel’s

"It started in the plains. That's where it became world-famous."

Goulash soup is one of the best-known and most iconic dishes of Hungarian cuisine, with a history dating back as far as 1787. It was originally prepared by Hungarian shepherds outdoors, in a bogrács, using simple ingredients, yet it has a distinctive, rich flavour.

The basis of classic goulash is the paprika-flavoured stew, which is regarded as one of the most important cooking techniques in Hungarian cuisine. The recipe has evolved continuously over time, but it was Gundel who brought about the real breakthrough.

At the Gundel Restaurant, which opened in 1910, Károly Gundel reimagined goulash soup: he refined the balance of flavours, made the preparation method more elegant, and elevated this traditional peasant dish to the international gastronomic stage. Thanks to this, goulash has become well-known and recognised not only in Hungary but throughout the world.

At Gundel, we continue to honour this legacy to this day. Our goulash soup is made with homemade noodles, using carefully selected ingredients, and represents a fusion of tradition and refined hospitality.

At Gundel Restaurant, where the classic recipe is prepared in the traditional way.

How is the dish prepared according to the Gundel recipe?

Beef goulash soup is classically made from beef shanks. However, we use the best part of the animal, the fat-covered cheek meat, because the juicy meat adds a special flavour to the soup. The meat is cooked for 3 hours. The secret of the best goulash soup is the proportion and consistency of the root vegetables used. Noodles are prepared in the traditional way. The chopped refreshing greens add an exciting vibrancy to the rich flavour of the silky thick soup with every bite.

How did the recipe become part of the tradition, part of the Gundel heritage?

“Goulash is a soup-like dish made with plenty of broth, onions and paprika, served with diced potatoes and csipetke,” wrote Károly Gundel some time ago. He invented the restaurant version of goulash soup, basing it on the traditional paprika-flavoured goulash stew. He also popularised the recipe internationally, so the dish owes its great fame to the Gundel restaurant.

Why was it selected for the National 11, considered the essence of Hungarian flavours?

‘Hungarian goulash soup’ has been a Hungarikum since 2017. It is named after the greatest legend, Puskás, who is what most foreigners think of when they think of Hungary. Along with its close relatives, pörkölt and paprikash, goulash is one of the most important dishes, traditionally cooked in a bogrács. However, the method of preparing goulash soup, made from goulash, is quite different from that of the shepherds’ bogrács goulash. Traditional goulash soup is considered our national dish. According to Taste Atlas, it is the 16th best soup in the world.
